In pursuit of tradition

We obtain the unique flavour of Sabbione cooked ham by using only quality ingredients in a long, demanding process. Whole legs of pork, and not assembled pieces of meat, are processed and then salted in a brine without polyphosphates or lactose: a solution that is a jealously-guarded family secret.

The hams are then massaged and steam-cooked for 12 hours before being left to rest for two days, packed in aluminium and finally pasteurized.

It is thanks to this complex and careful preparation that ours is a unique product: fragrant, compact and full of flavour – a pleasure for the nose and the palate.
